Zucchini stuffed with feta cheese
Stuffed zucchini is perfect for vegetarian grilling.
Mediterranean hearty with a very little spiciness.
for 2 persons
- 2 small zucchini
- 100 g feta cheese
- 2 shallots
- 2 stalks rosemary
- Chili powder
Wash the zucchini and cut in half lengthwise.
Carefully scoop out with a teaspoon.
Chop half of the “inside” of the zucchini. Shallot and rosemary as well.
Mix all the ingredients together and pour into the hollowed zucchini (salting is not necessary, for this purpose the shepherd’s cheese is quite enough).
Sprinkle chili powder to taste.
Placing the stuffed zucchini on some aluminum foil while grilling will reduce the risk of burning from the bottom.
Grill until the feta cheese is slightly melted, then the zucchini is also cooked. This takes a relatively long time – especially on aluminum foil (15 – 20 min.).
This goes quite wonderfully with a homemade herb curd.
