mediterranean pan fried vegetables

This vegetable skillet tastes like the south.
“Verdure alla mediterranea” – Mediterranean pan-fried vegetables.
Delicious as a main dish with rice or as a side dish with any type of meat.
Or – the combination is the highlight – with fresh fish!

Ingredients
- 1 red onion
- 2 cloves garlic
- 1 red bell bell pepper
- 1 small zucchini
- 1 vine tomato
- 1 handful of Italian herbs – preferably fresh: rosemary, thyme, basil, oregano …
- 1 tablespoon olive oil
- Salt & Pepper
Preparation
Wash the vegetables, if necessary. peel and cut into bite-sized pieces.
Chop the garlic. Chop the rosemary.
Pour hot water over tomatoes and peel (But it does not have to, I just do not like the tomato skin :)).
Heat olive oil in a large skillet.
Sauté onions with garlic and rosemary.
Gradually add the rest of the vegetables: First the zucchini, then the peppers and at the end the tomato.
Allow to cook over low heat. This takes 5-10 min. – depending on how al dente you like your Mediterranean stir-fry vegetables.
Meanwhile, chop the remaining herbs.
Stir in the herbs just before serving to retain their fresh flavor.
Season to taste with salt and pepper.
